Ingredients
For the dough
2 cups flour
3 level tbsp butter
2 egg yolks
1 whole egg
1 tbsp sugar
2 tbsp cognac
For the syrup
Honey
Water
For garnish
Walnuts
Cinnamon

Method
For the dough
Mix the flour, butter, eggs (lightly beaten with a fork), sugar, and cognac until you have a firm dough. Knead well and roll into a thin sheet on a floured surface. Cut the dough into narrow strips or ribbons and, if desired, tie them into loose knots.
Pour plenty of oil into a pot or deep frying pan. Once the oil is hot, fry the dough pieces until golden.
For the syrup
Simmer honey with a small amount of water over low heat. As a guide, use half the amount of water compared to the honey. Once the syrup is ready, drizzle it over the diples. If you prefer, you can first dip the diples into the syrup using a slotted spoon so they absorb it well, then arrange them on a serving platter and drizzle with extra syrup.
For garnish
Sprinkle with crushed walnuts and cinnamon.
